My wls friendly take on the clic chicken stuffed with swiss cheese and ham. 1 chicken breast cut width wise into 2-3 pieces and pounded until very thin 1 oz swiss cheese grated 1-2 slices ham, or turkey ham 1 tbs light mayo 1 tbs spicy brown mustard 1 green squash sliced 1/2 yellow onion chopped Butter flavor cooking spray Garlic powder Paprika Salt and pepper to taste Pound chicken until thin. Mix together mayo and mustard and spread on chicken. Sprinkle chicken with spices. Place 1/2-1 slice of ham on chicken and top with 1/2 of the cheese. Roll chicken tightly. Spray cooking container with non-stick spray. Place chicken on bed of sliced green squash and onions. Add 2tbs of chicken broth and cover tightly. Cook at 400 degrees for 20-25mins. Sprinkle with parmasan cheese if desired. Enjoy! Alternate cooking method: spray frying pan with non-stick spray. Fry chicken on all sides until browned while holding with tongs to keep chicken sealed. Add veggies and few tbs of broth and cover for 5-8 mins. Enjoy!
